I don’t know about you but I am regularly looking for new recipes. Specifically, quick and delicious ones that are somewhat seasonal. And I’ve got to be honest that this time between Winter and Spring is an odd one to me. One day it’s hitting 70 in Virginia, and the next day we’re back down in the 30s with a chance of snow.
While I would absolutely love to transition fully to Spring and warmer temps, this seasonal ambiguity lends itself well to a variety of recipes. If it’s cold one day, I might make something toasty and braised that makes the whole house smell good. And if it’s a warm day, I’ll opt for a quicker, lighter dinner so we can spend more time outside with the kids. With all of that variety, I thought I’d round up some of my favorites recipes on the blog for just such a time as this. You’ll find some hearty, wintry dishes, and some light, Spring-time meals as well. I hope you enjoy some new recipes and add them to your (almost) Springtime dinner rotation!
An Almost Springtime Recipe Round-Up
- Chicken Pot Pie— for those colder days when you want something warm, yummy and that has leftovers!
2. Lemony Spaghetti Aglio e Olio with Arugula and Pancetta–a lighter Springtime pasta for the days when you need to make something quick.
3. Stuffed Peppers–these could go between either season, but do take a little more time so save them for a day when you don’t mind a little extra time in the kitchen. Believe me though, they’re worth it.
4. Shepherd’s Pie–the best Shepherd’s Pie I’ve ever had. A wintry dish that makes for a crowd.
5. Korean BBQ Bowls–an easy and sweet spin on ground beef that even your kids will like!
6. Ground Turkey and Red Pepper Bowls–ultra healthy and actually delicious.
7. Sesame Chicken–an easy, light and very yummy dish that almost tastes like takeout!
8. Cider Braised Meatballs and Couscous–a favorite of mine. These can be made with ground pork or ground chicken for a healthier option!
9. Easy Bolognese–seriously, crazy easy but with a secret ingredient that will change how you make bolognese for forever.
10. Slow Cooker Tikka Masala–for the day when you can prep beforehand, and simply dig-in at night!
