Delicious and Healthy Ground Turkey & Red Pepper Bowls

I saw my brother over Thanksgiving and he mentioned that he meal preps each week. When I learned that he would make a big batch of unseasoned ground beef, rice and vegetables, and eat it all week long, I knew he needed this recipe. What I love about it is that the ground turkey is seasoned so well, it doesn’t even taste like turkey. It’s also chock full of vegetables and makes enough to feed a crowd. Did I mention that it’s simple and delicious? I make this every other week in our dinner rotation and I think it is there to stay.

Ground Turkey & Red Pepper Bowl

A well seasoned ground turkey bowl, full of yummy vegetables and large enough to feed a crowd!

Ingredients
  

  • 1 lb ground turkey
  • 1 1/2 tsps salt plus more to taste
  • 3 1/2 tsps paprika
  • 1 tsp garlic powder
  • 1/2 tsp fennel seed
  • 1 tsp black pepper plus more to taste
  • 6 large carrots
  • 2 red bell peppers
  • 2 zucchini
  • 2 handfuls baby spinach or around 3 oz

Instructions
 

  • Stir the spices (salt, paprika, garlic powder, fennel seed and black pepper) in a large bowl, add the ground turkey and mix together with your hands. Set aside for now.
    Prep your veggies: quarter and chop the carrots and place in one bowl. Seed and chop the red peppers, and quarter and chop the zucchini. Can place the red pepper and zucchini in a bowl together.
    Now that you're prepped, brown the spiced ground turkey in a large pot over medium-high heat for 5-6 minutes until cooked through.
    Add the chopped carrotts and let them cook for 5 additional minutes.
    Then add the red peppers and zucchini. Salt and pepper to taste. After using s&p, add the handfuls of spinach and stir everything all together.
    Turn the heat to medium low, cover the pot and let cook for an additional 15 minutes stirring occassionally to let all the flavors meld together.
    Serve over pearled couscous, rice, or other starch you have on hand.

  1. Yes meal prepping is so helpful! Especially cooking the vegetables because mine ALWAYS go bad! I’ve never thought about doing ground turkey, though—such a great idea. We generally rotate through beef, pork, and chicken, but I’m going to have to branch out 😍

    1. Yeah I don’t even like turkey but this recipe doesn’t taste like turkey (and is quite healthy) so to me that’s a huge win! 😅
