Apple Snacking Cake (Gluten free!)

This cake is filled with apples and cinnamon, and works great with gluten free flour! Adapted from Bon Appetit.

Ingredients
  

  • 1 cup Gluten free flour can also be made with AP flour if you don't want the cake to be GF
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1 tsp Diamond Crystal or 1/2 tsp morton kosher salt
  • 5 1/2 tbsp salted butter
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3 large apples, preferably Granny Smith

Equipment

  • 1 box grater side with the large holes

Method
 

  1. Preheat oven to 350 degrees F. Line an 8x8 baking pan or a 9 inch pie pan with parchment paper, leaving overhang on the sides.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon and salt, then set aside.
  3. Melt the butter in the microwave or over the stove and place in a large bowl along with the vanilla, granulated sugar and brown sugar. Whisk to combine.
  4. Add eggs to the large bowl with wet ingredients and whisk. Then add reserved dry ingredients to the large bowl of wet ingredients and whisk again.
  5. Peel the apples and grate on the large side of a box grater. Then, add to the large bowl of ingredients and stir until evenly distributed. Put batter into prepared baking pan.
  6. Bake cake until a toothpick comes out clean--around 30 minutes. Let cool before trying to remove from the pan. Enjoy!
